Baked Shrimp with Pimento and Feta
3 lbs shrimp, peeled & deveined
1 Stick of Butter
1 1/2 tbs minced garlic
1 small jar chopped pimento
1/2 cup dry white wine
1/2 cup fresh lemon juice and additional lemon sliced
8 oz Greek feta, crumbled
A large baking dish that can hold all the shrimp in a single layer
1. Turn the oven to 400.
2. Combine wine, lemon juice, and garlic in small mixing bowl. Set aside.
3. Layer lemon medallions and butter in the baking dish. Place the shrimp in a single layer in the baking dish.
4. Top with pimento and feta
5. Bake 10 minutes or until shrimp is just done.
Serve over pasta or rice pilaf. Enjoy!
